This Oven-Baked Sausage and Bell Pepper Tray is a simple, no-fuss dinner that delivers big on flavor with minimal cleanup. The Italian sausages, bell peppers, and onions are seasoned and roasted together on a single tray, creating a delicious and hearty meal that’s perfect for a busy weeknight.

Oven-Baked Sausage and Bell Pepper Tray
Ingredients:
Ingredient Quantity
Italian sausages 1 pound
Bell peppers (one red, one yellow), sliced 2
Large onion, sliced 1
Olive oil 2 tablespoons
Dried oregano 1 teaspoon
Salt and pepper To taste
Fresh parsley, chopped (for garnish) As needed
Instructions:
Preheat Oven & Prep Tray: Preheat your oven to 400°F (200°C). In a large disposable aluminum tray or a baking sheet, arrange the 1 pound of Italian sausages evenly.
Add Vegetables & Season: Add the 2 sliced bell peppers and 1 sliced large onion around the sausages. Drizzle the 2 tablespoons of olive oil over the sausages and vegetables. Sprinkle the 1 teaspoon of dried oregano, salt, and pepper over the entire tray. Toss everything gently to ensure that the sausages and vegetables are evenly coated with the oil and spices.
Bake: Bake in the preheated oven for about 25-30 minutes, or until the sausages are browned and cooked through, and the vegetables are tender.
Finish & Serve: Once done, remove the tray from the oven and let it sit for a few minutes. Garnish with freshly chopped parsley before serving.
